If you’re a fan of chicken wings, then you’re going to LOVE this Vietnamese fish sauce chicken wings recipe. If you are hesitant to try them because fish sauce sounds scary, please don’t be! I too was once afraid of this marvelous ingredient and now use it all the time. The fish sauce is the key to creating the salty and satisfying sauce that covers these crispy chicken wings. This recipe is super easy to make for a weeknight dinner. We like to eat them with rice and veggies (Vietnamese style meal).
Audrey and Huy’s Vietnamese Fish Sauce Chicken Wings (serves 2)
Ingredients:
12-14 chicken wings (drums and flats)
3-4 tbsp flour
10 tbsp fish sauce
6 tbsp white sugar
1 bird’s eye chili, chopped
2 cloves of garlic, chopped
½ shallot, chopped
2 tbsp sliced green onions, chopped for topping
Process:
1. Season the chicken wings with salt and pepper, then coat them in the flour. Skip this step if you are pan frying or baking the wings but we recommend to deep fry them for a crispy and delicious skin. The flour helps to make the wings crisp up in the oil. heat your cooking oil for the chicken wings.
2. Heat a medium sized non-stick pan over medium heat. Add a small amount of oil to the pan and stir fry the garlic, chili and shallots for 1-2 minutes. In a small bowl mix together the fish sauce and sugar. Add water to the bowl and attempt to dissolve some of the sugar. Then pour this liquid into the pan and cook everything together on medium heat for a few minutes. You just want the sauce to reduce and thicken ever so slightly. Once the sauce is done, turn off the heat and fry the chicken.
3. Fry your chicken wings in oil until they are cooked, about 15 minutes. They will become golden brown and crispy. Once they are cooked, let the oil drip off and then transfer them into the sauce pan. Turn the heat back on and toss them in the sauce until they are evenly coated. The color of the wings should resemble a cockroach’s wing (Vietnamese traditional saying) which just means a deep golden-brown color.
4. Transfer the wings to a plate and top with the chopped green onion and some black pepper. Serve with rice and veggies. The wings should be salty and a little bit sweet so it’s best to be eaten with rice as the flavor is very powerful and intense, but totally delicious!
